Granny Smith Apple Pie

This apple pie uses Granny Smith (green) apples which are lower glycemic index, have a nice tart flavor which is perfect when combined with spices like cinnamon and nutmeg. Serve with vanilla ice cream or whipped cream or just a nice cup of tea and enjoy the fall flavors.


Prep Time 10 minutes


Cooking Time 25-30 minutes


Yields 6-8 Servings


Ingredients


  • 5 medium size Granny Smith apples (organic, you can leave the peel on for extra fiber)

  • 3/4 cup of brown sugar

  • 1tsp baking powder

  • 1 tbsp flour

  • 1/2 juice of whole lemon

  • 1tsp freshly graded nutmeg

  • 1tsp cinnamon

  • 1tsp allspice

  • 1tsp cloves

  • 2 pie crusts (store bought or homemade)

  • 1-2 tbsp butter

Directions


  • Preheat the oven to 425F

  • Wash and scrub apples

  • Roughly cut apples into small cubes and toss with the rest of ingredients. Make sure that each piece is well coated in the mix. If you don't have a specific spice, just add more of what you have on hand (for example, no nutmeg, substitute for more cinnamon).

  • Use one pie crust for the bottom of the pie, fill it up with the apple mix

  • Use one pie crust for the top, make sure that the edges are sealed well.

  • Pierce top pie crust a few times with a fork to allow for steam to come out

  • Lightly spread butter on top crust (omit if not using)

  • Bake for 25-30 min until the edges are crisp.

  • Let the apple pie cool down for 5-10min and then serve with ice cream or with a nice cup of herbal tea.
