This recipe is very quick to make, simple and a hit at any pot-luck. Kids love snacking on these roasted carrots. Add them as a salad topping, serve as a side dish or enjoy your favorite way.
They come out roasted, caramelized and with a ting- so delish!

Yields 6-8 Servings
1lb organic whole carrots (preferably in season)
4 cloves garlic, crushed
3 to 5 sprigs of fresh thyme (substitute for 1 tablespoon of dried thyme)
2 tbsp olive oil
2 tbsp red wine vinegar
Salt and pepper
Preheat the oven to 400F (200C)
Wash and scrub the carrots, if they're organic you don't have to peel them.
Roughly cut them up, lengthwise so that they fit in a glass roasting dish.
Add crushed garlic cloves and thyme to the carrots in a roasting dish
Add olive oil, red wine vinegar, salt, pepper and then toss carrots until well combined.
Cover with foil (this step is key because it will steam the carrots and allow flavors to absorb)
Roast for 20 min covered with foil, then remove foil for the last 10min.
Let the carrots cool, serve on your favorite dish and enjoy.
