This is a holiday favorite in our house, especially during winter season when you can find fresh cranberries and citrus fruit is at its prime. Both fruits are excellent source of Vitamin C, great for keeping your immune system strong during the winter months.

Yields: 6-8 Serving
Ingredients
1 cup of fresh cranberries
1/2 cup of dried raisins
1 whole orange (zest and juice)
1/2 cup of maple syrup (or 1/2 cup of brown sugar)
1/4 cup of olive oil
1 tbsp ground flax seeds/flax meal diluted in 3 tbsp of water (or 1 egg)
2 cups of all purpose flour (or ground almond flour - gluten free option)
1 tsp of salt
1 tsp baking soda
1 tsp baking powder
1/2 tsp of allspice
1/2 tsp freshly grated nutmeg
1/2 tsp of ground cinnamon
Directions
Preheat the oven to 350F.
Combine fresh cranberries and raisins together. Set aside.
Whisk together: flour, salt, baking soda, baking powder, allspice, nutmeg and cinnamon.
Combine wet ingredients: orange juice and zest, maple syrup, and olive oil.
Mix in egg substitute (flax and water), or egg if using.
Add in dry ingredients to the wet mix and combine.
Gently fold in fresh cranberries and raisins.
Pour mixture into a greased 9x5x3 inch loaf pan and bake for 60 minutes or until toothpick inserted comes out clean.
Remove from pan and let cool before slicing.
Enjoy a slice of this nutritious and delicious bread with a cup of tea or coffee. That's my favorite way to enjoy it, but my kids like it as a snack in their lunch boxes.
